Last year my friend Julie, from Marmalade Mom, brought me a zucchini from her garden. My jaw dropped when I saw the thing. I’m not exaggerating when I tell you that it was at least 2 feet long! I shredded it up and put it in ziploc bags, 1 cup of zucchini per bag, and have been using it here and there ever since. Today, I’m using some of that shredded zucchini to make chocolate zucchini muffins that are to die for! Seriously, they are amazing! I use applesauce in place of the oil and 1 cup of regular size chocolate chips instead of the minis – and they are still amazing! Today, I tried them with some leftover andes mint pieces that I had in the freezer instead of chocolate chips – I think I like the regular chocolate chips better, but the mint option was a good idea for something different. You have to try them . . . like, right now!
