Easter Cupcakes

These simple Easter cupcakes are one of my favorite Easter things that my mom did for us when we were kids.  Today, I love them because they’re simple, cute, and a fun and easy way to let my kids help in the kitchen. Just make up a batch of your favorite cupcakes. When they’re cool, stir some green food coloring into a bowl of coconut. After you frost a cupcake, the kids can dip them in the coconut and then add a few jelly beans to the top.  Now that they’re ready, we’re all set for Easter!
