Week 2 of The Breakfast Project!

This week’s breakfast project was even more successful!  The kids loved every meal and are asking for more lemon muffins (if you haven’t tried them yet, you are missing out!).  I did resort to cereal on Sunday morning when we have to get ready quick and be out the door for early church, but every other day we had a home made breakfast!

Days 1 & 2:  Lemon Muffins — even making half a batch last week made so many muffins that I had left over batter to make some fresh ones for this week!

Days 3:  Cereal

Days 4 & 5:  French Toast & bananas

Day 6 & 7:  toast & bowl of fruit (cut up banana and apple and some frozen grapes)

If you can’t tell by the fact that we eat the same thing for 2 days in a row most of the time, I like to cook in bulk so that I get a day off.  I like to cook, but with a house full of kids who are ready to eat the moment they get out of bed in the morning, its just nice to have it all ready to go some mornings.  French toast is a great one because it cooks quick and if you use an electric griddle you can do a ton all at once and it warms up in the microwave nice and quick.

    I make breakfast on Saturday night for Sunday morning. Makes it quick and easy. I also make sure it is something that won’t make a huge mess. One of my kids favorite is applesauce/oatmeal muffins.
