Cookies and Cream Cake Filling

I love making cakes!  It’s fun to decorate a beautiful and/or creative cake but the best part for me is making a cake that tastes great. A great tasting cake is as simple as a Duncan Hines cake mix, made according to directions and adding a box of instant pudding mix and an extra egg (it will need to cook longer as well). You can take it to the next level by adding a filling between layers or cutting a cake in half to give you those layers.  Since I discovered cake fillings, I have a hard time making a cake without one. Back when my sister and I were making wedding cakes we were given some recipes for cake fillings that were amazing but I came up with this one on my own:

Cookies and Cream Cake Filling

Whisk together and refrigerate for at least 5 minutes to set:

1 box vanilla instant pudding mix

1 cup milk

Crush (I put them in a ziploc bag and use a rolling pin):

2/3 package of Oreos

Whip until stiff peaks form:

1 pint whipping cream

1/4 cup granulated sugar

1 tsp vanilla

Fold whipped cream into pudding mixture, then fold in crushed Oreos.  This goes great with a chocolate, red velvet or even yellow cake.  This will fill a 9×13 cake with a little bit left over for sampling 🙂
